30 minute one pan fish dinner

Servings: 2

Ingredients
  

  • 1-2 TB Olive oil
  • 1 cup Cherry tomatoes, halved
  • 2 cloves Garlic, thinly sliced
  • 2 Boneless, skinless fish filets
  • 2 cups Baby spinach
  • 2-3 sprigs Fresh Italian parsley
  • salt and pepper

Method
 

  1. Heat oil in pan over medium low heat, add tomatoes and garlic, sauté for 2 minutes
  2. Add 2 cups water, simmer for 20-40 minutes
  3. Add fish filets and parsley sprigs, cook to desired doneness, roughly 10 minutes
  4. Divide spinach between two bowls, place fish on top
  5. Reduce sauce, and serve over fish, or add pasta, cooking until al dente, and serve alongside fish
