Frittata with prosciutto and chard

Ingredients
  

  • 7 each eggs
  • 2 oz prosciutto cooked until a little crispy
  • 1 bunch chard cleaned and sautéed
  • 8-10 each cherry tomatoes halved
  • 1 oz shredded parmesan cheese
  • 2 TB olive oil

Method
 

  1. Preheat oven to 375 degrees
  2. Whisk eggs together until uniform
  3. Preheat oven safe, nonstick pan over medium low heat, add olive oil, then eggs
  4. Add remaining ingredients to the pan, distributing evenly
  5. Transfer pan to oven, and cook for 10-15 minutes, or until eggs are completely set
  6. Remove from oven, cool for 5 minutes, and slide frittata onto a cutting board, or wire rack to cool before cutting
